A few years ago I found a demo version of a program for the Mac that let you created your own software instruments from samples. I no longer have it - and can't remember the name of it.

Are there any programs out there that let you do this? (I know about the GarageBand Musical Typing sampler 'trick' but was looking for something a little more polished.)

I'm currently using TX16Wx, which is free. http://www.tx16wx.com/download/

It's a fairly powerful sampler. I got it because I had a bunch of instruments in EXS24 and Native Instruments Kontakt format and no player for either of those formats in my new DAW, so I got hold of Awave Studio (http://www.fmjsoft.com/awavestudio.html#main) to convert them into SoundFont format, which I can then load into TX16Wx. But, more generally, you can create your own instruments from scratch using samples as well. (It supports velocity layers and such as well.)
